Make Baked Goods? A New Opportunity to Buy Grains Grown in New York
New Pilot Project Farm to Bakery Connects New York City Food Manufacturers with Upstate Farmers
The New York Industrial Retention Network and the New York State Department of Agriculture & Markets are collaborating on a pilot project, Farm to Factory, to develop an upstate-downstate sourcing relationship between New York State millers and New York City bakeries and food processors. Several mills have New York grown wheat, rye, emmer, spelt and other grains available for city businesses to use in their products. - Champlain Valley Milling, a certified organic roller mill, has created a blend of regionally grown wheat that meets the Greenmarket requirements for locally grown ingredients. CVM also has New York grown spelt and emmer flour. For more information contact Sam Sherman, 518-962-4711.
- North Country Farms, a stone mill, offers bread, pastry, and all-purpose flour milled from wheat grown in northern New York. For more information contact Kevin Richardson, 315-771-0633.
- Wild Hive Farm Mill, a stone mill in the Hudson Valley, uses only organic grains in its wide a variety of wheat flours (bread, clear, all-purpose, pastry) as well as spelt, triticale, and corn. See their full product list with prices. For more information contact Don Lewis, 845-416-4002.
- Farmer Ground stone mill near Ithaca will soon receive its organic certification. Besides wheat, spelt, and emmer flours, it is running a “Special Offer” right now on corn meal. Miller Greg Mol describes it as “a fine grind, largely 'floury' but with some 'gritty' material, somewhat similar to Bob's Red Mill Old Fashioned corn meal. We can adjust the degree of coarseness to order within reason.” The company is looking for a buyer of at least 200-500 lbs; pricing 35-50 cents per pound, depending on volume.
